Say no more, amiright? This came together a lot easier than I was expecting. Actually, the hardest part was the crust, since making it one consistency was really hard without a food processor.

1 cup pitted dates (soaked in water for 10 mins)
1 cup raw walnuts
1/2 cup almond flour (or more walnuts)
1.5 cups raw cashews (soaked in water for 4-6 hours)
1/4 cup lemon juice
1/3 cup coconut oil, melted
1/2 cup + 2 Tbsp rice milk
1 tbsp xanthan gum*
1/2 cup agave nectar or maple syrup
To serve and be fancy-pants:
*I added xanthan gum to the rice milk to thicken it. You could also use psyllium husk, or chia seeds, or flax meal, or cornstarch. Just something to thicken the milk!
