It's no secret that I like food. I've always loved the creative and colourful aspects of dining, and going vegan only encouraged that creativity and colour. Some people think that vegan foods are inherently healthy, but may I remind you all that lots of sugars are vegan. In fact, it's often only the processing that makes table sugar non-vegan, as it can be processed through animal bone char. There are also numerous forms of sugar that are plant-based: maple syrup, agave nectar, dates, figs, (any dried fruit, really), beet sugar, evaporated cane juice...
As I grew more comfortable with my vegan diet, I noticed an increase in my sugar intake and a decrease in the colour on my plate. So this month, I've decided to make a commitment to eating a whole foods diet once again. It's not a mandatory part of veganism, but it's an aspect that I'd like to incorporate. This isn't to say that I'll give up sugar! I just want to spend this month focusing on eating well. That means more well-rounded meals, a greater incorporation of vegetables, and less store-bought snacks. I'll be more adventurous with my produce purchases, try new recipes, and maybe even become friends with kale.
This morning, I kicked things off with a green smoothie. Classic, right? Pretty easy to make, actually:
